AIR FRYER STICKY MAPLE SYRUP & HARISSA TURKEY DRUMMERS SERVED WITH TABBOULEH
Ingredients Serves 4-6
150g bulgur wheat
100ml maple syrup
1 tsp garlic powder
2 tbsp rose harissa paste
Sea salt flakes & freshly ground black pepper
4 medium Golden Turkey drummers
3 good handfuls of fresh mint, coriander & parsley, leaves chopped
220g cherry tomatoes, quartered
4 spring onions, trimmed and thinly sliced
½ cucumber, deseeded and diced
100ml extra virgin olive oil
1tsp sugar
Juice of 1 lemon
Preheat the air fryer to 160°C

Method
Cook the bulgur wheat according to the instructions on the packet, fluff the grains with a fork and leave to one side to cool.
In a small bowl, mix the maple syrup, garlic powder and harissa paste with a good pinch of salt and pepper. Spread the paste over the turkey drummers and leave to marinate in the fridge for at least 1 hour.
Cook in the preheated air fryer for 25 -30 minutes until cooked through and nicely coloured.
In a large mixing bowl, combine the cooled bulgur wheat with the fresh herbs, tomatoes, spring onions and cucumber.
Put the olive oil into a mixing jug along with the sugar, lemon juice and a little salt and pepper and whisk until combined.
Once the turkey drummers are cooked, pour the dressing over the tabbouleh, stir well to coat and place in a salad bowl. Serve immediately with the turkey drummers.
